    • Full talk on brewing cassava beer, and the beer drinking manners. Note the variety of payawalu beer made from moldy cassava cake (p. 330), that is to say, it acts as an amylolytic ferment.     • The large mounds discovered in the south of the Amazonian basin testify to the existence of complex societies from the 2nd - 3rd century. These monumental earthen buildings were used in particular to organize festivals with an abundance of fermented drinks. Far from the clichés of so-called primitive Amazon tribes. The Kaikang were the last relay witnesses of these vast organizations still alive after the Spanish and Portuguese colonization.
